Everything on this menu is cooked entirely over live wood fire. The season decides the ingredients. The hearth decides the rest.
Emberline offers a single five-course tasting format nightly for all eight seats. Dietary accommodations are welcomed with advance notice. The menu changes with the season and what the fire permits.
Amuse-Bouche
A single bite to awaken the palate. Composed daily from whatever the flame reveals.
First Course
Rooted in Oregon soil. Each dish begins with a single ingredient pulled from the fire.
Second Course
The fire deepens. Longer cook times, more complex smoke, more demanding restraint.
Palate Cleanser
A pause between fire courses. One small composition, always cold.
Main Course
The center of the ritual. One primary subject, given the fire and the time it demands.
Pre-Dessert
A small sweetness to prepare for the close.
Dessert
The fire cools. The final plate is always composed around absence as much as presence.
Mignardises
Presented with the check. Small things made with the same attention as everything that preceded them.
